Banana peel contains high levels of phenolic compound and polyphenol oxidase. Melanin maybe formed by the reaction of these components upon scrubbing during transportation and at low temperature, leading to the formation of brown spots on the banana peel. However, it will still be safe to consume normally.
Recommended Storage Conditions
Unripe bananas: Store at 13C or above. Banana plants grow in the tropical regions and subtropicalzones, they cannot cope with the cold weather. Therefore low temperature will affect the chemical reactions leading to ripeness of the bananas.
Ripe bananas (yellowish skin with brown spots): Can be stored in a refrigerator to reduce the speed of further ripening. Even if the banana peel turns black or brown, it will still be safe to consume normally.
