This semi-soft and cured cheese is made from cows milk, is an Italian cheese made by traditional method, which the manufacturing process is same as that of mozzarella, but unlike mozzarella, it is smoked. It can be used instead of mozzarella in many dishes, especially in pizza, grilled dishes, as it melts better in baking. Also, prefect as a part of cheeseboard, diced as an appetizer, or using in risottos, pasta.
