- Katoukichibee Shouten was established in 1860. They use traditional methods to make junmai sakes and aged them at ice-cold temperature for long period. It is served at Japanese royal family events and has gained an international reputation.

- Aged for one year at below 10C so the yeast in the sake stays in a dormant state. The ageing process allows for a more complex flavour and a smooth, rounded body and gentle aroma
